SAIT Alumni, Amanda decided to expand her knowledge of global culture and cuisine; she spent five years throughout Europe at catering companies and fine dining restaurants in Germany, Switzerland, Eastern France, Scotland and London. After 2 years at The Savoy Hotel, Amanda once again packed her bags and moved to Toronto, where she spent the next 5 years working as a Sous Chef at North 44 and Sash. In 2017, Amanda entered the San Pellegrino Young Chef competition, and she was the youngest contestant and only female chef in Canada to reach the semi-finals.

In 2021, Miltiadis Chiotelis and Amanda Lambert, a husband-and-wife duo, founded Meraki Catering. Their paths crossed at SASH in Toronto, and together, they evolved into a culinary force. When the food scene was impacted by the pandemic, they packed their bags and moved to Calgary, Alberta. Since then, they've grown the Meraki brand from a food truck to a full-service catering and special events company.
