We contacted Nomi Reiss of Roq Desserts to inquire about making us a non-traditional wedding cake. Like many people who tend to procrastinate, we contacted her only a few weeks before our wedding. We only had a vague idea of what we wanted - we weren't set on any specifics - we just knew that we wanted something tiered, modern, simple, and elegant. Nomi was very flexible and offered a number of suggestions to help narrow down our tastes and preferences. Ultimately, the husband (as I now get to call him :-) decided that he wanted to have cupcake tiers. Not very original, but it fit with our overall casual and simple feeling. Nomi worked with me (the bride) to come up with a design that would meet my sense of elegance while still satisfying the groom's preference for simplicity. One thing that was important to me was to find a way to incorporate the topper from my parents' wedding cake (from 1960). The design of my parents' topper was quite ornate and not consistent with the overall feel that we wanted for our cake. We sent pictures to Nomi and she made suggestions for which portions of the topper we might want to extract and incorporate into ours, and that is exactly what we did. We performed surgery on a 56-year-old cake topper and extracted the little bride and groom to use on our cake. In the end, Nomi designed a beautiful and elegant top layer that was a place of honour for the bride and groom from my parents' wedding cake, and she incorporated it with cupcake tiers that were simple yet elegant, in keeping with our colour scheme, and very tasty! We enjoyed working with Nomi and were very pleased with the final product, which she delivered to the wedding venue and ensured that it was brought safely to its place of honour during the reception.
